Yes, yes Fall is my favorite time of year. Officially, the first day of Fall isn't until tomorrow, but I just couldn't wait. Earlier this week, I decided to celebrate Fall early. I put up all our decorations, and I made homemade bread and zucchini bisque soup. This is literally my favorite soup, even though when I first made it I didn't really like zucchini. If you're looking for something festive for the Fall, try out this soup (it only took me 30 minutes to make).  Of course, I had my favorite pumpkin spice candle burning while I made the bread.

Zucchini Bisque Recipe
2 medium yellow onions (chopped)
1 1/2 lbs. of zucchini (sliced, not pealed)
1/4 tsp. salt
1/8 tsp. nutmeg
1/2 c. half and half
2 Tbs. butter
3 c. chicken broth
1/8 tsp. pepper
a pinch of cayenne pepper
a dash of grated cheese (I used mozzarella, but Parmesan is good too)


Directions: saute onions in butter.  Boil onions in broth, add zucchini until soft.  Add spices.  Pour everything in a blender 1 cup at a time.  Puree until smooth, add half and half.  Garnish with grated cheese.
***note: I've also substituted the zucchini with butternut squash or pumpkin, and it was super delicious.  Just a tip if you're not a huge zucchini fan.
